PUMPKIN ROLL

PUMPKIN ROLL Cake
3 eggs
2/3 cup pumpkin
1 cup sugar
1/2 tsp. cinnamon
3/4 cup flour

Filling
1 cup powder sugar
2 Tsbp. butter
8 oz. cream cheese (room temp.)
1 tsp vanilla
1 cup chopped walnuts (optional)

Use a 15 x 10 x 3/4 inch cookie sheet pan. Line the pan with wax paper, (have it a little bit longer than the pan). Mix cake batter in bowl. Pour the batter into the wax paper in the pan. (If you want walnuts sprinkle them on top of the batter.) Bake @ 350 degrees for 10 to 15 mins. Lay out on the counter a clean kitchen towel, dust it with powdered sugar. When the cake is done, turn the cake over onto a towel. Carefully remove the wax paper from the cake. Roll cake up in the towel. Mix filling ingredients in bowl. After cake has cooled, unroll it, spread filling on it and roll back up.

Put on platter and lightly dust with a little bit of powder sugar.
